Dr. Stull is an Associate Professor of Nutrition Sciences and Registered Dietitian Nutritionist in the Department of Human Sciences and Design at Baylor University in Waco, TX. Her research interests are focused on polyphenol-rich foods and other functional foods, and their effects on the risk factors associated with metabolic syndrome (i.e, pre-diabetes, obesity, and hypertension). Additionally, she focuses on dietary interventions and healthy eating programs aimed at preventing chronic diseases in populations at risk of developing type 2 diabetes and cardiovascular disease. Currently, Dr. Stull is an active member of the Academy of Nutrition and Dietetics and the American Society for Nutrition (ASN). She serves on the Editorial Board of the Journal of the Academy of Nutrition and Dietetics and is a Fellow of the Academy of Nutrition and Dietetics (FAND). In addition, she holds the positions of Treasurer on the ASN Board of Directors and Chair of the ASN Finance and Audit Committee. Additionally, Dr. Stull received the 2021 ASN Volunteer of the Year Award along with her Minority and Diversity Affairs Committee colleagues. Additionally, she has served as the Chair of the ASN Early Career Nutrition Interest Group.
