My name is Claudia Valencia; I studied the Bachelor of Nutrition Science at UDLAP. In my Bachelor, I made my research project on the antioxidant capacity of phenolic compounds of blue corn (Zea mays L.) in the biological model C. elegans. For that reason, I decided to study my Master´s degree in biotechnology at UPAEP, where my research project is related to the identification and isolation of lactic acid bacteria present in the honey produced by Scaptotrigona Mexicana, an endemic bee of Puebla, México. I also made a Master´s degree in biotechnology and biomedicine with a specialization in biotechnology at the University of Jaén, España. There I made a research project related to the isolation of lactic acid bacteria and their antagonistic effect on pathogenic bacteria associated with diseases. Now I am studying a Ph. D. in biotechnology, focusing on the study of bioactive peptides for the prevention of obesity. My academic interests are related to functional foods and how they can be used as an adjuvant for the treatment and prevention of chronic degenerative diseases.
