I am a Postdoctoral Research Associate with a demonstrated history of conducting human feeding studies and clinical trials investigating the effect of bioactive compounds in functional foods on human health benefits. My dissertation focused on the valorization of the largest by-product of the brewing industry, brewers spent grain (BSG), and its effect on cardiovascular disease risk factors resulting in three refereed publications and multiple presentations at national conferences. My postdoctoral research involves investigating the pharmacokinetics and pharmacodynamics of non-nutrient bioactive plant-based food compounds and their metabolites in the reduction of degenerative chronic disease risk factors. In addtion, I have held positions in academia as a Visiting Assistant Profession and in the food industry as a Food Technologist within research and development.
