Sergio O. Serna Hernandez is in the process of completing his PhD degree in Food Science and Technology at Texas A&M University. Prior to this, he completed his bachelors engineering degree in Food Science and Technology and his MSc degree in Biotechnology at Tecnologico de Monterrey. Later, he worked as an assistant professor at Tecnologico de Monterrey teaching undergraduate level classes. He has published 1 book chapter, 3 referred journal articles and over 68 citations. His research interests focus on the food science and biotechnology industry and the impact of product development on nutrition and health.
