Xinyin Jiang received both her doctoral degree in nutrition and her registered dietitian credential at Cornell University, Ithaca, NY in 2013. She studies nutrients involved in one carbon metabolism, such as choline, betaine, folate and vitamin B12, which regulate early development via multiple pathways. Her research group currently conducts mammalian cell culture, animal and human studies to assess the influence of choline intake during pregnancy on molecular and functional changes in the maternal-fetal dyad.
