Dr. Weiwen Chai is tenured Associate Professor in the Department of Nutrition and Health Sciences at the University of Nebraska-Lincoln. She received her M.S. and PhD in Human Nutrition and completed a two-year National Institutes of Health (NIH) Postdoctoral Fellowship Training in Nutritional Epidemiology and Behavioral Cancer Prevention with the University of Hawaii Cancer Center. As a nutritionist with extensive training in epidemiology and basic science, her goal is to understand the etiology of obesity and chronic diseases and contribute to strategies of chronic disease prevention. She is interested in studying how dietary, lifestyle, behavioral, socioeconomic, and biological factors influence the development of obesity and chronic metabolic diseases such as type 2 diabetes, non-alcoholic fatty liver diseases (NAFLD) and cancer through epidemiological and intervention studies.
