Pei-Sheng came from Taiwan and obtained her PhD degree in Food Science and Technology from National Taiwan University. She was working on the chemoprevention of phytochemicals in colorectal cancer, colitis, and obesity. She also invested in the study of metabolic diseases and gut health. In May 2022, Pei-Sheng joined Dr. Shengmin Sang’s lab as a postdoctoral scholar working on the effects of whole grains on colitis, colon cancer, and cardiovascular disease. She also put effort into developing the 6-Gingerol aspirinate as a novel prodrug of aspirin.
