I am a Ph.D. student and Graduate Research Assistant in the Department of Applied Science and Technology at North Carolina Agricultural and Technical State University, specializing in Bioscience and molecular biology. I hold a Master’s degree in Food and Nutritional Sciences specializing in molecular nutrition from the same university.
My research endeavors focus on preventing obesity and related illnesses, such as diabetes, liver diseases, and inflammation, using molecular biology techniques to identify molecular pathways. I achieve this by utilizing fruit and vegetable byproducts, including garlic scapes, watermelon (rind and skin), brewer spent grain and onion peel. In addition to my research, I aim to develop sustainable and cost-effective functional nutraceutical products from these byproducts for therapeutic purposes.
