Objectives: Berries receive a special nutritional value globally due to its high content of phytochemicals, vitamins, and minerals. Among them major dietary polyphenols are anthocyanins, proanthocyanidins, hydroxycinnamic acids, flavonoids, and flavonols. In this study we have carried out profiling and compositional analysis of some berry fibers.
Results: Identified series of compounds comprising organic acids, hydroxybenzoic acid derivatives, flavonoids, anthocyanins, elligatannins, triterpenoids, amino acids, phospholipids. The levels of extractable polyphenols and non-extractable polyphenols in Aronia berries were found to 2.55 and 9.48 % GAE (Gallic Acid Equivalent) respectively. The 13C solid state NMR supported the presence of non-extractable phenolic compounds bound to the fibers.
Conclusions: Berries are rich in extractable and non-extractable polyphenols. Non-extractable polyphenols have the potential to reach into the colon and might improve theĀ human gut health.
