Guanying (Bianca) Xu entered the PhD program in Department of Food Science and Human Nutrition at University of Illinois Urbana-Champaign during the fall of 2020 with interest in studying the interactions between immune system and dietary interventions and a previous background in studying dietary effects on epigenetic regulation. Her current research focuses on high protein diet and its effect on immune responses, including inflammatory responses made in colonic epithelial cells using genetic knockout animal model. Her current research also includes examining on population of regulatory T cells and innate lymphoid cells, profiling of cytokines and chemokines and microbial diversity in colon using genetic knockout animal model.
She is the recipient of a number of honors and awards, including the College of Agricultural, Consumer and Environmental Sciences (ACES) and Paul A. Funk Recognition Award, Kathryn VanAken Burns Memorial Fund, Philip L. and Juanita Fitzer Francis Fellowship in Health and Wellness and Krause Scholarship. Also, she has taken part in mentoring undergraduate and graduate students through many activities, including being a board member of Student Advising on Graduate Education committee held by Graduate College.
Ms. Xu was born and raised in City of Hefei, Anhui Province in China and holds a B.S. in Food Science with high honors and a M.S. in Human Nutrition, both awarded by University of Illinois at Urbana-Champaign. Currently she’s in her second year of PhD program, she seeks to complete her qualifying examination in August 2021 and continue her research for the following 2-3 years.
