Elaine is currently a doctoral candidate and graduate research assistant in the department of Nutrition and Dietetics at SLU. Elaine is also a registered dietitian who is licensed in the state of Missouri. She has previous clinical and research experience working with pediatric patients. Elaine received her BS in Nutrition from Miami University in Oxford, Ohio (2019). During undergrad, she was involved in research on T1DM, T2DM, and artificial sweeteners. She returned home to Saint Louis and completed her Dietetic Internship and MS in Nutrition at Saint Louis University (2021). Elaine passed her master's thesis, "Countermarking the Misuse of Pediasure Among Healthy U.S. Children," with distinction. Elaine then worked on the PCORI funded "TEAM UP" Study in the Center for Healthy Weight and Wellness at Washington University School of Medicine prior to returning to SLU to pursue her PhD in 2022. Elaine also volunteers as a dietitian provider at Casa de Salud, a healthcare center for the immigrant and refugee community of St. Louis.
