I am a PhD student in food biotechnology from Mexico. I work in innovation, science, and development of new food proposals with a focus on the prevention and/or treatment of diseases. Additionally, I specialize in obtaining, isolating, and characterizing bioactive compounds from natural sources that could be used as ingredients in functional food formulations. I am interested in modifying and improving the molecules of bioactive compounds and the effects of them on their physical properties and biological potential.
