Dr. Hopkins is an Assistant Professor in the Department of Public Health and Prevention Science at Baldwin Wallace University. She is also a registered and licensed dietitian nutritionist in the state of Ohio. Her training was completed at Ohio University (BS), Johns Hopkins Bloomberg School of Public Health (MSPH), and Ohio State University (PhD). She holds academic certificates in Global Leadership (Ohio University Global Leadership Center) and Public Policy and Management (Ohio State University John Glenn School of Public Affairs). Dr. Hopkins is a public health nutritionist by training. At Baldwin Wallace University, she teaches undergraduate- and graduate-level courses including Global Health, Prevention of Chronic Disease, Theories and Practices in Health Promotion, Program Planning, Design, and Evaluation, Foundations of Clinical Nutrition for Nursing and Public Health Professionals, and Methods in Public Health Research. Dr. Hopkins’ research aims to improve food security and prevent nutrition-related diseases in underserved populations through community interventions and public policy targeted at health promotion activities, food environment modifications, and sustainable food systems. She is active in the nutrition and public health professional communities including the Academy of Nutrition and Dietetics, the American Society for Nutrition, and the American Public Health Association, having held several leadership positions in local and national organizations. In 2017, Dr. Hopkins served as one of two national Science Policy Fellows within the American Society for Nutrition. She has 36 peer-reviewed publications with several other manuscripts currently under review, as well as has presented at conferences both nationally and internationally over the last 15 years.
