Dr. Grace Taiwo Otitoju is a Professor of Human Nutrition in the Department of Food Science and Technology. She started her carrier life as a Lecturer in the prestigious University of Nigeria, Nsukka (UNN) and currently a full-time faculty of Federal University Wukari, Taraba State, Nigeria. Otitoju, Grace Taiwo step-up in her second Sabbatical Leave at Texas Tech University as a Visiting Assistant Professor (2023/2024). She obtained her B.Sc. Biology (2000), M.Sc. in Human Nutrition (2004) and had her Ph.D. degree in Human Nutrition (2014). Her research interest is in Experimental Nutrition, Food Product Development and Value Chain Addition, Community Nutrition/Public Health with special interest in Maternal and Child nutrition, Nutrition education, Food security& food safety as well as Nutritional Toxicology. She currently teaches both undergraduate and postgraduate courses. She has supervised over forty (40) undergraduate projects and postgraduate students. Grace is a member of Nutrition Society of Nigeria (NSN), African Nutrition Society (ANS), International Union of Nutrition Society (IUNS), and American Society for Nutrition (ASN), Society of Environmental Toxicology and Chemistry (SETAC) in Africa, Europe and North America. She is also a member of the Physiology Society, United Kingdom, the Biochemical Society, London and the Nutrition Society UK. She is also a member of Nigerian Society for Experimental Biology (NISEB). Professor Grace is the current chairperson for Nutrition Society of Nigeria, Taraba State Chapter. She has attended many academic conferences with paper presentations, published articles in reputable national and international journals.
