Postdoctoral Fellow
Arkansas Children's Nutrition Center & University of Arkansas for Medical Sciences
Chelsey Fiecke, PhD, is currently working as a postdoctoral fellow in the Department of Pediatrics at the University of Arkansas for Medical Sciences (UAMS) conducting research at the USDA-ARS Arkansas Children's Nutrition Center (ACNC). Dr. Fiecke's research focuses on understanding the impact of dietary bioactives on optimizing health and developmental outcomes in infants and children. Through her interdisciplinary training spanning targeted metabolomics (postdoc, ACNC), nutritional biochemistry (PhD, University of Minnesota), and biology (BS, University of Northwestern - St. Paul), her current research leverages LC-MS/MS approaches and microbiome analyses to evaluate links between maternal dietary and non-dietary factors, composition of human milk bioactives, including oligosaccharides (HMOs) and host/microbial polyphenol metabolites, and infant development.
