Dr. Diana Gonzales-Pacheco is a Registered Dietitian Nutritionist (RDN), an Associate Professor at the University of New Mexico, and the Assistant Director of the Dietetic Internship. Dr. Gonzales-Pacheco’s research is focused on maternal child health, including gestational diabetes and pediatric obesity. More recently, her research has focused on basic needs insecurities in higher education. Her research has been published in the Journal of the Academy of Nutrition and Dietetics, Topics in Clinical Nutrition, and Current Developments in Nutrition. She co-authored chapters on diabetes and pregnancy in the Health Professional’s Guide to Nutrition, Diabetes, and Pregnancy and in the 6th Edition of The Art and Science of Diabetes Care and Education. She is a Fellow of the Academy of Nutrition and Dietetics and was previously recognized as Outstanding Dietetics Educator from the New Mexico Academy of Nutrition and Dietetics.
