Dr. Elizabeth (Beth) Racine received her MS in Nutritional Science at the California State University,
Los Angeles in 1993 and a MPH & DrPH in Maternal and Child Health and Health Economics and
Finance from the Johns Hopkins Bloomberg School of Public in 2003. Dr. Racine has experience
teaching graduate and undergraduate courses in global health, public health nutrition, policy and
leadership, and social determinants of health. Dr Racine’s research focuses on identifying factors that
predict dietary intake in different populations and evaluating initiatives intended to improve diet
quality. Currently she is focused on understanding the dietary behaviors of emerging adults.
