Dr. Yantao Zhao is currently a Research Associate in the Laboratory for Functional Foods and Human Health at North Carolina Agricultural and Technical State University. He focuses on investigating the preventive effects of bioactive components from functional foods (wheat, oat, barley, ginger, tea, apple, soy, and rosemary) and herbal medicine on MGO/AGEs-associated diseases, metabolic syndrome, inflammation, GI health, and colon cancer using in vitro and in vivo models. He has published his research in many peer-reviewed academic journals, like Journal of Nutrition, Journal of Agricultural and Food Chemistry, Chemical Research in Toxicology, and Molecular Nutrition & Food Research, etc.
