Dr. Rachel Kopec received a B.S. in Pharmaceutical Sciences and in Business and a Ph.D. in Human Nutrition from the Ohio State University. After an AgreenSkills postdoctoral fellowship at INRA (the French National Agricultural Institute), she returned to the Ohio State University where she now serves as an Associate Professor of Human Nutrition.
Her research focuses on dietary bioactive interactions, using targeted and untargeted liquid chromatography-mass spectrometry (LC-MS)-based metabolomics to elucidate which interactions occur during food processing, digestion, and in target tissues. Her group also employs lipidomics/metabolomics techniques for unknown metabolite identification. She collaborates with other groups for multi-omic integration, in an effort to “make more meaning” from metabolomics data. She also serves as Editor-in-Chief of the Journal of the American Nutrition Association, a peer-reviewed journal with specific focus on precision nutrition.
