Ru is a Registered Dietitian and Ph.D. candidate in Community Nutrition at Cornell University. She earned her BS in Dietetics and MS in Nutritional Sciences from the University of Illinois at Urbana-Champaign. Ru's current research focuses on the effectiveness and implementation of nutrition interventions in the food pantry setting. She employs both quantitative and qualitative methods, collaborating with two New York City food pantries to evaluate community-supported agriculture and produce prescription programs. Her research aims to address food insecurity and improve access to nutritious foods in underserved communities.
