Dr. Sheau Ching Chai is an Associate Professor in the Department of Health Behavior and Nutrition Sciences at the University of Delaware. She earned her doctoral degree from Florida State University and subsequently pursued postdoctoral training at the Nutrition Research Institute at the University of North Carolina at Chapel Hill. Dr. Chai’s research program aims to investigate the role of functional foods and dietary supplements in prevention and reduction of age- and nutrition-related chronic diseases. Other areas of research include investigation of the link between inflammation, oxidative stress, and chronic conditions in humans. Dr. Chai has conducted numerous studies involving older adults and postmenopausal women, and her research findings have shown that several plant-derived foods and compounds can reduce cardiometabolic risk factors, bone loss, and cognitive decline.
