Afrina Brishti, Ph.D., is an ORISE Post-Doctoral Research Associate at Grand Forks Human Nutrition Research Center, USDA-ARS. Dr. Brishti is leading a research project to understand the influence of resistant starch and protein content of pulses on substrate oxidation. Briefly, this study aims to test whether consuming whole food that naturally contains resistant starch, such as pulses, increases fat oxidation in human subjects. Before joining the current USDA position, she worked as a Post-Doctoral Research Fellow for three years at the University of North Dakota-School of Medicine and Health Science (SMHS, UND) and studied the impact of food allergen exposure in the pathophysiology of Alzheimer's disease. Dr. Brishti obtained a Doctoral (Ph.D.) degree in Neurobiology (transcriptional regulation of Alzheimer's & Aging phenotypes with RNA binding proteins) from the University of Science and Technology of China (USTC). She is a pharmacist and completed Postgraduate and Undergraduate degrees in Pharmacy from the University of Rajshahi (RU). As a registered Pharmacist (BD), she worked in Pharmaceutical manufacturing settings as a Production pharmacist and as an adjunct instructor of physiology and pharmacology to nursing students. Besides science studies, she loves to cook Bangladeshi cuisines and travel.
