Professor of Developmental Nutrition, Department of Pediatrics, University of Arkansas Medical Sciences; Director of Precision Health Research, Arkansas Children’s Research Institute; & Director of the Metabolomics and Analytical Chemistry Research Core Arkansas Children's Nutrition Center. Dr. Kay’s area of research is Translational and Precision Nutrition and Health, particularly the impact of the metabolism of dietary phytochemicals from fruits, vegetables, and botanicals on human health. His research core is focused on the development of qualitative and quantitative metabolomic methodologies for establishing the contribution of dietary phytochemicals to the human metabolome. This work has led to the development of a food composition knowledge database (MetaboFood®) comprising chemical composition and metabolome data, including metabolic and disease pathway associations for supporting precision nutrition and health initiatives.
