Lacy, a seasoned Registered Dietitian Nutritionist, brings a unique blend of formal education in Biomedical Science from Marshall University and a master’s degree in Human Nutrition and Dietetics from Loma Linda University. Her expertise extends beyond the classroom, with additional training in diabetes education, yoga, herbalism, and mental health nutrition. She has had the privilege of serving on Studio 8 Yoga & Wellness faculty, providing menu reviews for schools, Head Start, and recovery programs, and contributing to the boards of several statewide, non-profit, and professional organizations across the food, nutrition, and wellness sectors.
She has spent the better part of her career as a clinician & resource coordinator helping folks prevent & reverse chronic disease through lifestyle interventions, including increased access & awareness of real food, herbal therapies, stress management strategies, natural movement, and prioritizing self-care.
She is pursuing a doctoral degree on a research team at WVU Davis College, where she is studying the impact of using lifestyle coaching via telehealth to prevent and reverse cardiovascular disease in adults with obesity and at least one other risk factor for CVD across rural West Virginia.
She is not just a professional but also a small business entrepreneur and mom of two free-range kiddos. She and her family operate a small family farm, Elmcrest Farm, and a local food market and cafe, Twelvepole Trading Post, in Wayne, WV.
