Dr Olufunke Ezekiel is a Senior Lecturer in the Department of Food Technology, University of Ibadan, Ibadan, Nigeria, from where she obtained her BSc, MSc and PhD degrees, respectively.
Presently, she teaches among other courses Fundamentals of Food Processing and Fermentation Technology. Her area of research interest is in Food Processing and Food Biotechnology.
Over the years, Dr Ezekiel has garnered substantial experience in collaborative projects, trainings and engagements with several researchers, faculty members and food industries where she offers consultancy services for development and improvement of food processes through research using appropriate technology.
She has fostered successful relationship with small, medium and large scale food enterprises which has led to various mutual benefits such as patent registration, advancements in food quality control, food safety and good manufacturing practices. She has got some educative papers in reputable national and international peer reviewed journals. She is a member of the Nigerian Institute of Food Science, Institute of Food Technologists, USA and American Society for Nutrition.
As a food technologist, Olufunke Ezekiel, is part of a dynamic team with keen interest in developing suitably integrated and affordable approach to ensuring food and nutrition security through a sustainable collaborative effort within and outside Nigeria.
