Trained as a clinical dietitian, Dr Chan has a strong background in food and nutrition education and research. She has designed and delivered several nutrition programs at both undergraduate and postgraduate levels in Kazakhstan, Singapore, and the UK, enhancing nutrition literacy and applied research, and successfully graduating several cohorts. Dr Chan currently serves in the University Faculty Senate and Academic Council and she leads courses in Global Nutrition and Sustainability, Masters in Public Health Dissertations and PhD Global Health Seminars. She heads the Central Asia Food Innovation Lab (CAFI9), which focuses on developing food systems and databases for nutrition research in Central Asia. Passionate about promoting clinical nutrition education, she collaborates with healthcare professionals, education providers, and professional bodies to enhance nutrition capacity and train researchers to help address global health challenges. Her vision is to ensure food security for all, advocating for culturally appropriate, equitable, and inclusive food experiences for everyone. Through her work, she aims to drive advancements in food technology and nutrition science, contributing to the progress of the field.
